Orange, Cranberry & Elderberry Scones

Thank you to the amazing Shelbi Haberman who has created a scrumptious orange, cranberry and elderberry scone recipe for us using Feel Good Syrup!

Preheat oven to 400 degrees Celsius and line a baking sheet with parchment. 

Mix together:
3 cups AP flour
3 tsp baking powder
1/2 tsp baking soda
1 tsp salt
zest of 2 oranges

To the dry mixture:
Add 3/4 cup cold butter, cubed. Combine mixture until the pieces of butter are about the size of a pea. Using a food processor also works well!

Once you have the butter worked into the dry mixture, create a “well” and add the following:
juice of 2 oranges
3/4 milk of your choosing (dairy or not)
and 2 Tbs of So Elderberry Good Syrup

Slowly fold the dry ingredients with the wet. When the mixture is loosely combined, pour onto a clean dry service and add 1/2 cup fresh or frozen cranberries (if you can find fresh elderberries definitely substitute those instead!). Gently form the dough into a square (approx 7″ squared and 1-1 1/2″ thick). Cut into four, then each quarter in half, diagonally. Now you have 8 beautiful triangle shaped scones! Feel free to cut them into whatever shapes you prefer. 

Bake for 20 minutes on the middle rack.
While the scones are baking, prepare the glaze.

1 cup powdered sugar
1 Tbsp So Elderberry Good Syrup

You may want to adjust the glaze according to the thickness. You want the glaze to spread, but not run off. Add more sugar to thicken, and more syrup to make it thinner.

Once the scones have cooled, drizzle/dunk/spread the glaze overtop. Enjoy!
